
The Story Behind GrayDownAndBrown
GrayDownAndBrown.com didn’t start in a boardroom or a design studio. It started on a Tuesday night in a dim corner of a Vesterbro bodega, over a cold pilsner and a game of billiards.
For years, five friends—Allan Gray, Christian Down, Maximillion Brown, Claus Gammelby, and Rune Danielsen—have been on a mission: to visit every authentic brunt værtshus in Copenhagen before they disappear.
From Pub Crawl to Preservation
What began as a personal quest to explore the city’s wood-paneled charm evolved into a tribute to Copenhagen’s living history. Inspired by the legendary book Stamsteder, we realized that as the city modernizes and turns “gray,” these community hubs are under threat.
Our mission is simple: To map the soul of the city so that anyone—whether you’re an “old guard” regular or a curious newcomer—can find their own stamsted.
Beyond the Smoke
We aren’t here to romanticize the clouds of tobacco (most of us don’t even smoke!). However, we accept the haze as a part of the history of these spaces. At the same time, we celebrate the “new bodegas”—the smoke-free spots that manage to keep the billiards, the community, and the soul of the old world alive in a modern context.
Why We Do It
Whether the walls are stained by decades of history or the air is a bit clearer than it used to be, these bars represent the last bastions of unpretentious Copenhagen.
